Fish Tacos with Grilled Pineapple Salsa

While I was making the menu for the week I asked SP if he wanted anything specific for dinner. The first thing he said was "know what we haven't had in awhile, fish tacos." I'll admit, I was a bit surprised. We eat fish regularly but not usually in tacos. I was up for the challenge, especially since Josie had just posted a recipe for Grilled Fish Tacos with Grilled Pineapple Salsa. Those tacos were my inspiration for these beauties.

Fish tacos with pineapple salsa

I've mentioned before that we don't own a gas grill, and grilling something as delicate as fish on a charcoal grill would be tricky for a weeknight. My grill pan recently experienced a small catastrophe, so that was out as well. I felt like making a battered fish taco, so I turned to my recipe for tilapia francese. I added a bunch of seasoning to the flour, which resulted in very flavorful fish. When it came to the salsa I knew the peppers had to go since they don't agree with me. I just swapped those out for grape tomatoes. I mashed up some avocado with a little cilantro and lime juice, shredded some lettuce and dinner was served.

We all LOVED these. I had to fight SP for the leftovers. Baby Girl took her taco apart and ate everything separately (such a strange child) but she cleaned her plate. These will definitely be on our permanent rotation. And since I used canned pineapple, we can make these year-round. They'll be such a great burst of summer flavors in the cold depths of winter.

Fish Tacos with Grilled Pineapple Salsa

1 cup flour
1 teaspoon chile powder
1 teaspoon dried oregano
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon garlic powder
kosher salt and pepper
1 egg
2 tablespoons water
4 pieces tilapia filets, cut into strips
2 tablespoons butter
2 tablespoons extra virgin olive oil

1 can pineapple rings, drained, juice reserved
grape tomatoes, finely diced
3 tablespoons minced fresh cilantro, plus more for serving
1 tablespoon minced red onion

1 avocado, pitted
lime juice, to taste
salt and pepper, to taste

1/2 head romaine lettuce, thinly sliced
Flour tortillas

Place flour in a pie plate and add the chile powder, oregano, onion powder, cumin, garlic powder, salt and pepper. Stir to combine. Beat the egg and water in a second pie plate. Coat each piece of tilapia with flour, then coat with egg, then pit it back in the flour for a second coat.

Heat butter and oil in a large non-stick skillet over medium heat. Place tilapia in pan and cook for about 2-3 minutes on each side until golden brown.

Meanwhile (or you can do this ahead of time), grill the pineapple in a grill pan over medium-high heat until brown on both sides. Transfer the pineapple to a large cutting board and finely chop. In a medium bowl, combine the pineapple, grape tomatoes, cilantro, and red onion. Add a splash of the pineapple juice. Season to taste with salt and pepper.

Grill the tortillas for 30 to 45 seconds per side. Transfer to a plate and cover loosely with a dishtowel or foil.

Mash the avocado in a medium bowl. Add the lime juice, and continue mashing to form a smooth sauce. Season with salt and pepper.

To serve, top tortillas with fish, pineapple salsa, lettuce, avocado, and cilantro.

Chicken Taco Salad

I know, I know. I haven't been a great blogger lately. As I said in my July recap post, I've lost my mojo. I'm not making many new recipes and I've had writers block trying to blog the ones I have made.

But this salad...oh man. I love a good dinner salad and this Chicken Taco Salad from Pioneer Woman fit the bill. Lots of fresh veggies mixed with lettuce and grilled chicken.

Chicken taco salad

I opted to grill the chicken rather than cooking it in oil and butter. I also made a quick rub with various spices (chili powder, cumin, garlic powder, onion powder, salt and pepper) rather than use taco seasoning. And since I had some tortillas leftover I decided to make some cheese queadillas as a side dish. Man, there is just something about a plain cheese quesadilla paired with a flavorful salad. Yum.

Chicken Taco Salad
As seen on The Pioneer Woman

Dressing:
3/4 cups ranch dressing
1/4 cup salsa
3 tablespoons finely minced cilantro
Chicken:
2 chicken breasts, cut in half lengthwise
2 tablespoons taco seasoning
cooking spray
Salad:
2 ears corn, shucked
2 romaine hearts, shredded thin
3 roma tomatoes, diced
1/2 cup grated pepper Jack cheese
2 whole avocados, diced
3 scallions, sliced
1/2 cup cilantro
Tortilla chips, crushed slightly

Combine the dressing ingredients in a bowl and stir together. Cover and refrigerate.

Generously season both sides of the chicken breasts with the taco seasoning or spices. Spray a grill pan with cooking spray and heat over medium-high heat. Cook the chicken for 5 minutes, then flip and cook for another 4 minutes. Remove from the grill pan and set aside to cool slightly, then cut it into cubes.

Place the ears of corn on the grill pan. Cook until the corn is browned in spots. Remove from the pan and cut off the kernels with a sharp knife. Set aside.

To assemble the salad, pile the chicken, corn, lettuce, tomatoes, cheese, avocado, scallions, cilantro, and crushed chips on a big platter. Drizzle the dressing all over the top, or serve it on the side so everyone can dress their own salad.

Recipe Redo: Mexican Sour Cream Rice

I've been making this Mexican Sour Cream Rice for years. I used to make it any time we had anything even slightly Mexican-inspired for dinner. It was definitely my go-to side dish.

Mexican sour cream rice

I've been recommending the dish to friends a lot recently and I figured it was time to update my blog with some better pictures. Please forgive those early blogging pics - I may not be a professional photographer but I think my photos have come a long way since then.

Mexican sour cream rice

The last time I made this I used regular Monterrey Jack cheese instead of pepper Jack because Baby Girl doesn't like spicy things. We both felt it lost a little something with the milder cheese so next time I'm going to throw caution to the wind and go back to pepper Jack. We don't remember it being super spicy that way so hopefully Baby Girl won't refuse to eat it.

Mexican Sour Cream Rice
Modified from All Recipes

1 3/4 cups chicken broth
1 cup uncooked long grain white rice
1 cup sour cream
1 (4 ounce) can diced green chile peppers
2 cups shredded pepper Jack cheese
1 1/2 cups frozen corn
1/4 cup finely chopped fresh cilantro
salt and pepper to taste

Bring the chicken broth to a boil in a large sauce pot. Add the rice, stir and then reduce the heat to low. Cover and simmer for 20 minutes.

Meanwhile, preheat the oven to 350. Lightly grease a 1-1/2 quart casserole dish.

Add the sour cream, green chile peppers, cheese, corn, and cilantro to the pot with the rice. Stir to combine, then season with salt and pepper. Transfer to the greased casserole dish.

Bake uncovered for 30 minutes until the top is lightly browned.

Grilled Chicken Tacos with Spiced Mayo and Avocado Salsa

These Grilled Chicken Tacos with Spiced Mayo and Avocado Salsa are, hands down, my new favorite taco. As soon as I saw them I knew I had to make them. I could almost taste them just by reading the recipe.

Chicken tacos

I had to make a slight modification because I refuse to pay $1 for one lime when I can't even be guaranteed the lime will have any juice in it. Have you ever bought a lime and found it completely dry? How does that even happen? Lemons are still cheap so I just swapped it out. I also left out the hot sauce because Baby Girl isn't a fan of spicy food.

I prepared these on my indoor grill pan because, as I've mentioned before, we have a charcoal grill and getting that set up on a weeknight just doesn't happen. Since skewers won't fit on the grill pan I cut the chicken breasts in half lengthwise and grilled them before cutting into cubes. Same for the onion - I grilled it in rings and then chopped them. These tacos were so delicious we barely had enough leftover for one lunch the next day.

Grilled Chicken Soft Tacos with Spiced Mayo and Avocado Salsa
As seen on Seeded at the Table, originally from Weber's New Real Grilling

For the chicken:
zest of 1 lemon
1/2 teaspoon ground cumin
Salt & pepper
Olive oil
4 boneless, skinless chicken breasts, cut in half lengthwise
1 large yellow onion, peeled and cut into 3/4-inch rings

1/2 cup mayonnaise
Juice from 1 lemon
1 teaspoon hot sauce (optional)
1/4 teaspoon cumin

For the Avocado Salsa:
2 large avocados, peeled, pitted and diced
2 medium Roma tomatoes, seeded and finely diced
3 scallions, minced
2 tablespoons fresh lemon juice
1 tablespoon chopped cilantro
1/4 teaspoon hot sauce (optional)
8 taco or fajita-size flour tortillas

Preheat grill pan over medium-high heat.

In a large bowl or plastic food storage bag, combine the lemon zest, 1/2 teaspoon cumin, 1/2 teaspoon salt, 1/4 teaspoon black pepper and a few tablespoons of oil. Place the chicken pieces into the bowl or bag and toss to combine until evenly coated with the seasonings. In a separate bag or bowl, toss the onion rings with some oil, salt and pepper.

In a small bowl, whisk together the mayonnaise, lemon juice, hot sauce (if using), and 1/4 teaspoon cumin. Stir in water, 1 teaspoon at a time, until the mixture can be drizzled.

In another bowl, toss together the salsa ingredients and season with salt and pepper, to taste.

Add the onion rings to the grill pan and cook, turning often, until the onions are soft and blackened in spots. Remove from the grill to a bowl and cover with foil or plastic wrap. Add the chicken to the grill pan and cook 5 minutes on one side, then flip and cook another 4 minutes. Remove from the grill and let rest. Add the tortillas to the grill pan to warm and brown in spots, turning once. Cut the chicken and onions into bite-size pieces. Let everyone assemble their own tacos with the mayo and salsa.

Crunchy Baked Tacos

I love tacos but there was always something about them that made me feel like they wouldn't work for a weeknight. I think it was all the prep work for the various toppings, trying not to overfill them at the table and a general dislike of tacos made with soft flour tortillas. Then I saw these Crunchy Baked Tacos from No. 2 Pencil and it was like a light bulb went off in my head. Minimal work and crunchy shells. I was sold.

Crunchy baked tacos

Baking the shells with the meat and cheese already inside was brilliant - I hate when the cheese isn't fully melted and this solves that problem. Plus, you just take a taco from the baking dish and you're ready to eat. I kept the toppings simple - shredded lettuce, diced grape tomatoes and I found an avocado in my crisper so I diced that up, too. Some sour cream at the table and we were set.

Crunchy baked tacos

This is definitely my new favorite taco recipe. I swapped out my filling recipe but kept the method the same. The one thing I didn't like - these don't reheat well the next day. In fact, they were downright awful. My recommendation would be to only make as many as you anticipate eating. The good news is they take hardly any time to cook so you can assemble some more and bake them off quickly if you decide you want a second helping.

Crunchy Baked Tacos
Filling from A Taste of Home Cooking, method from No. 2 Pencil

1 5.8 oz box yellow corn taco shells (12 shells)
1 pound ground beef
1 onion, chopped
1 clove minced garlic
2 teaspoons cumin
2 teaspoons chili powder
Salt and pepper
2 tablespoons tomato paste
1/2 cup salsa
1/4 cup sour cream
2 cups of freshly shredded colby jack cheese
romaine lettuce, shredded
vine-ripened tomatoes, diced
sour cream
taco sauce

Preheat oven to 400 degrees and place shells in a 9x13 baking dish.

Heat a saute pan over medium heat. Add the ground beef and cook, breaking up the large chunks, until just starting to brown. Add the onion and garlic and saute until the onions are soft and the beef is cooked through. Add the cumin, chili powder, salt, pepper and tomato paste. Let cook for about 5 minutes. Off heat, add the salsa and sour cream and stir to incorporate.

Sprinkle half of the cheese in the bottom of each taco shell. Evenly distribute the ground beef in each shell. Top ground beef with remaining shredded cheese.

Bake for 8-10 minutes (mine were done at 8 minutes), or until cheese is melted and shells have started to crisp.

Remove from oven and top with lettuce, tomatoes, sour cream and taco sauce.

Recipe Redo: Avocado Enchiladas

Someone was looking for vegetarian Mexican recipes recently and I recommended these avocado enchiladas. Then I looked at the picture and cringed. I know enchiladas are hard to photograph but I knew I could do at least slightly better. We all love guacamole so I put these on the menu for the weekend.

Untitled

These are basically guacamole-stuffed tortillas topped with homemade enchilada sauce and cheese. Nothing wrong with that. My guacamole recipe is below but you can prepare it however you would normally. I don't add garlic or jalapeno, but some people like that. Whatever you do, make the homemade enchilada sauce. It's a very simple recipe and I love the spice and tang from the chipotle in adobo. It's the perfect compliment to the creamy avocado.

I froze the leftovers in individual portions and can't wait to pull out one of those parcels for a quick lunch or dinner.

Avocado Enchiladas
Modified from ...But where do you get your protein?

1 1/2 tablespoons olive oil
1/4 cup all-purpose flour (spooned and leveled)
1 can (14.5 ounces) reduced sodium chicken broth
1 1/2 tablespoons chili powder
1 small canned chipotle chile in adobo
3/4 cup water
4 ripe avocados, sliced in half, pit removed and flesh scooped out
1/4 cup finely chopped red onion
1/2 cup cilantro leaves, roughly chopped
Lemon juice, to taste
2 tomatoes, seeded and diced
Salt and black pepper to taste
8 fajita-size flour tortillas
8oz grated sharp Cheddar or Monterey Jack cheese
Additional cilantro leaves

Preheat oven to 350 degrees.

In a medium saucepan, heat 1 1/2 tablespoons oil over medium. Add flour and cook, whisking occasionally, 1 minute. Add broth, chili powder, chipotle, and 3/4 cup water; bring to a boil, whisking constantly. Reduce heat, and simmer until lightly thickened, about 10 minutes.

Spray a glass 9x13" baking dish with cooking spray. Mash the avocado in a bowl. Add the onion, cilantro, lemon juice, tomatoes, and salt and pepper. Mix together like you're making guacamole. Taste and adjust seasoning.

Lay one tortilla on a work surface. Spoon 1/8 the avocado mixture into each tortilla and roll them up. Place tortillas in the prepared baking dish and cover with the enchilada sauce. Sprinkle the cheese over the top.

Bake for 20 minutes. Sprinkle with additional cilantro just before serving.

Pork Carnitas

Another pork taco recipe? Yes, I know on Monday I shared a recipe for Cuban Street Tacos. SP actually made these Pork Carnitas back in early March and I'm just getting around to blogging them now. So I hope you guys like pork tacos!

As you may have realized, we've started doing Sunday dinners with my parents again. It started back in September after my stepgrandmother had a stroke and was subsequently moved to a long-term care facility. Things were very rough in the beginning, especially for my parents since my stepdad is the only one local and a lot of the burden of his mother's care fell to him. SP thought it would be a good idea to take food over to their house on Sundays so they could relax, spend time with Baby Girl and not have to worry about dinner for one night. SP and I recently started alternating the cooking so he could try out some new recipes and get back into the kitchen.

Untitled

SP actually prepared this whole meal himself while me, Baby Girl and my mom were at the Philadelphia Flower Show for the day. The flavor was outstanding. I was expecting a citrus flavor from the orange juice but all it did was add to the overall depth of flavor. These tacos were meaty and delicious.

Pork Carnitas
Williams-Sonoma Mexican cookbook

3 lbs boneless pork shoulder or 3 lbs country-style pork ribs
6 garlic cloves, halved
1 orange, zest of (cut into wide strips using a vegetable peeler)
3/4 cup fresh orange juice
sea salt
1 tablespoon canola oil (if necessary)
12 corn or flour tortillas, warmed
guacamole
salsa fresca
refried beans

Cut off any big pieces of fat from the pork and put the fat into a wide, heavy saucepan or frying pan. Cut the pork into strips about 1 1/2 inches long and 3/4 inch wide. Add the pork to the pan with the garlic, orange zest, orange juice, and 2 teaspoons sea salt. The meat should be in a single layer, if possible. Add water to barely cover the meat and bring to a boil over medium heat. Reduce the heat to medium low, cover partially, and cook, stirring occasionally, until all of the liquid has evaporated, about 1 hour. If the meat is not yet fork tender, add a bit more water, cover and continue cooking.

Uncover the pan and continue cooking the pork until all the fat is rendered and the meat is browning in the melted fat, 10-15 minutes longer. There is usually enough melted fat in the pan, but if necessary, add the 1 tablespoon oil. When the meat is brown and crisp, using a slotted spoon, transfer it to a colander and let any excess fat drain away.

Immediately transfer the pork to a warmed serving bowl. Serve with the warm tortillas, guacamole and salsa to make tacos.

Cuban Street Tacos

For our Mexican feast last month T made these Cuban Street Tacos. She prepped and cooked it before we got there, so the only thing we had to do was pull the pork and broil it.

This had such great flavor. And I loved the crispy bits so don't skip that step! I definitely ate way too many of these (we all did).

Cuban Street Tacos
As seen on Sweet Peas Kitchen, adapted from What's Cookin' Chicago, originally adapted from Cook's Illustrated, June 2008

1 (4-pound) boneless pork butt, cut into 2-inch chunks
1 tablespoon sea salt
1 tablespoon oil
1 cup water
1 cup chicken stock
1/2 teaspoon pepper
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon dried oregano
2 bay leaves
3 large garlic cloves, minced
1 to 2 jalapeos, minced
1 onion, peeled and halved
juice of 1 lime
1 medium orange, halved and juice, rinds reserved
8 corn tortillas
1 small red onion, thinly sliced
1/2 cup chopped cilantro
1 cup Monterey Jack cheese
2 limes, cut into wedges

Rub the pieces of pork shoulder all over with salt. Refrigerate for at least 1 hour.

Preheat oven to 300 degrees F.

Heat oil in a Dutch oven over medium-high heat. Add pork and sear pieces on all sides. Once all the pork is seared and lightly browned, remove from the pot and place in a large bowl. Pour in water and chicken stock, scraping the bottom of the pan with a flat-edged spatula to release all the tasty brown bits. Add pepper, cumin, chili powder, oregano, bay leaves, garlic, jalapenos, onion, lime juice, orange juice and orange rinds and bring to a simmer, stirring occasionally. Add pork pieces and cover the pot and place it in the preheated oven. Bake for 1 hour, take a peek and give the pot a stir to turn the meat. Put the lid back on and let it continue to bake in the oven for another hour.

After 2 hours of baking time, remove the pot from oven. Remove the bay leaves, onion and orange rinds from the pot and discard. Remove the pork and place in a large bowl; set aside. Place the pot on the stove top and let the remaining liquid come to a boil over high heat. Let it boil until it thickens up and is reduced to about 1 cup, about 10 -15 minutes.

Lower racks to near the bottom of the oven and turn oven to broil. In the bowl, pull each piece of pork in half using two forks. Pour the reduced liquid over the pork and add salt and pepper to taste; stir to combine. Place the coated pieces of pork on a wire cooling rack set on a baking sheet. Broil the meat for 5 to 8 minutes on each side until well browned. Serve immediately in warm tortillas. Garnish with red onion slices, cilantro, Monterey Jack cheese, and lime wedges.

Salsa Fresca

This is the other salsa recipe I made for the Mexican-themed dinner we had with friends last month. I've been making this one for ages but never thought to take a picture to share with you guys.

salsa fresca

Obviously this one is very different from the grilled salsa. This one is much lighter and chunkier. They're both delicious, just different. I think it was great to have both versions at the dinner. We had no problem inhaling both salsas and the guacamole.

Salsa Fresca
As seen in the Williams-Sonoma Mexican cookbook

1 lb. ripe tomatoes, cut into 1/4-inch pieces
1/3 cup finely chopped white onion
1/4 cup chopped fresh cilantro
1 jalapeno chiles, finely chopped (ribs and seeds removed if you want it less spicy)
2 teaspoons fresh lime juice
Sea salt to taste

In a bowl, toss together the tomatoes, onion, cilantro, chiles, and lime juice. Sprinkle with salt and toss again. Cover and let stand for 10 to 15 minutes to allow the flavors to mingle, then serve with your favorite chips.

Makes 2 cups.

Orange Margaritas

We needed margaritas to go with our Mexican-themed dinner. Since I had a bunch of navel oranges leftover from a previous recipe, I decided to make Orange Margaritas.

orange margarita

I ended up with 24oz of fresh-squeezed orange juice so I quadrupled the original recipe. It was a little heavy on the tequila and we couldn't really taste the orange juice so I've decreased the tequila below. These were delicious and really easy to make - the hardest part was squeezing all the citrus by hand. I definitely got an arm workout.

Orange Margarita
As seen on Confections of a Foodie Bride
Yields: 4 servings

6 oz homemade margarita mix*
6 oz fresh squeezed orange juice
4 oz silver tequila
4 oz orange liqueur
Sugar, for rimming glasses (optional)

Combine all the ingredients in a pitcher or carafe, stirring well.

Run one of the juiced limes or orange halves around the outside edge of the glasses and then dip in sugar. You can also dip the glass in water and then the sugar.

Fill glasses with ice and pour the margarita over the top.

*Homemade Margarita Mix
1/2 cup sugar
1 cup water
1 cup fresh squeezed lime juice

Heat the water and sugar in a small sauce pan over medium heat, stirring often, until the sugar is completely dissolved and the water is clear. Let cool. Pour into a pitcher with the lime juice.

Leftovers will keep 7-10 days in a jar in the fridge.

Restaurant Knockoff - Baja Fresh Grilled Salsa

I've been wanting to make Nicole's recipe for Baja Fresh Grilled Salsa for years, I just needed a party with enough people to eat it all. When we decided to do a Mexican-themed dinner with our friends, it was the first thing I knew I wanted to make.

roasted salsa

This could not have been easier. I used my indoor grill pan to char the vegetables and then whirred them up in the food processor. I only used one jalapeno since I wanted this to be mild enough for the kids to enjoy, but unfortunately my jalapeno was pretty spicy. It was great for the grown-ups, though. We inhaled this. Initially SP had been more excited about the salsa fresca I also made but ended up loving this one more. It's positively delicious and I can't wait to make it again.

Baja Fresh Grilled Salsa
As seen on Prevention RD, adapted from My Bizzy Kitchen

2 teaspoons extra virgin olive oil, to coat
6 large tomatoes
1-3 jalapenos (1 for mild, 2 for medium, 3 for hot), stem removed
1 onion, peeled and quartered
4 cloves garlic, peeled
Couple handfuls cilantro
1 teaspoon salt
Juice of 1/2 lime

Pre-heat a grill or grill pan to medium heat. Coat the tomatoes, jalapenos, onion, and garlic in the olive oil.

Grill the vegetables until they are charred, but not falling apart.

Place the vegetables in the bowl of a food processor or blender. Add the cilantro, salt, and lime juice. Blend until smooth. Serve with your favorite tortilla chip.

Crispy Black Bean Tacos with Feta and Slaw

Sometimes I'll put a dish on our weekly meal plan that makes SP nervous. He's always game to try anything I make and he's the first to say, "I trust you because you're a good cook" but we all know that sometimes a recipe can sound good on paper but not taste so great in person.

Untitled

These Crispy Black Bean Tacos with Feta and Slaw were one of those dishes that initially made him wary. When I told him the name of the dish he gave me that side-eye look of his that lets me know he's reserving judgement. I think it was the corn tortillas - neither of us are big fans of corn tortillas, but I knew frying them in a bit of oil would completely change their texture for the better.

Untitled

I'm happy to report that he loved these tacos, as did I. Baby Girl was also a huge fan. Per usual, she wanted to taste the black bean mixture and snacked on the broccoli slaw as I was getting everything prepped. Like Elly says, these are an awesome weeknight meal because there's very little prep work or cooking needed. I'm so happy SP loved this dish because I can't wait to make it again.

Crispy Black Bean Tacos with Feta and Slaw
As seen on Elly Says Opa, from Bon Appetit
Makes 8 tacos

1 (15 oz.) can black beans, drained and rinsed
1/2 teaspoon cumin
salt and pepper
1 1/2 cups broccoli slaw mix
2 teaspoons olive oil
1 tablespoon lime juice
2 scallions, thinly sliced
1/3 cup chopped cilantro
vegetable or canola oil
8 white or yellow corn tortillas
crumbled feta cheese
Bottled hot sauce for serving

Place the beans, cumin, and salt and pepper to taste in a bowl and partially mash.

In another bowl, toss the broccoli slaw mix with olive oil, lime juice, scallions and cilantro. Season to taste with salt and pepper, and set aside.

Heat about 3 teaspoons of the vegetable or canola oil in a large nonstick skillet over medium-high heat. Add as many tortillas as you can fit in a single layer. Move the tortillas around in the pan so they're all evenly coated with oil on both sides. After one side is golden brown, flip the tortillas over and spoon some of the bean mixture onto one half of each tortilla. Cook for about 1 minute. Fold the tacos in half and cook until golden brown and crispy, 1-2 minutes per side.

Remove the tacos to a paper towel-lined plate and drain off any excess oil. Open the tortilla and stuff with some of the slaw and crumbled feta. Repeat the process with the remaining tortillas, adding more oil to the pan, as needed. Top with hot sauce, if desired, before serving.

Citrus Chicken Burritos with Cilantro Lime Rice

I've mentioned before that I love Mexican food and try to make sure each weekly menu has at least one Mexican dish on it. Recently I had trouble deciding between these knockoff Chipotle chicken burritos and these citrus chicken fajitas so I decided to combine them into one dish.

citrus chicken burrito

These were delicious, if time-consuming to make. I didn't realize how many different things I needed to prep - the pico de gallo, the marinade for the chicken, the caramelized onions, the cilantro lime rice and the refried beans I served on the side. Once all of that was done, assembling these was easy and dinner was on the table in no time flat. Just be sure you have time to prepare everything in advance.

citrus chicken burrito2

I think these will be my go-to burritos from now on. I loved everything about them.

Citrus Chicken Burritos with Cilantro Lime Rice
From So Tasty, So Yummy and Very Culinary

Juice of half a lemon
Juice of one lime
Juice of one orange
2 tablespoons canola oil
1/4 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
2 boneless skinless chicken breasts

1 tablespoon olive oil
1 onion, sliced

4 roma tomatoes, cored and diced small
1 cup finely diced red onion
1 jalapeo chile, seeded and minced (optional)
2 tablespoons fresh chopped cilantro

2 cups cooked basmati rice, warm (from 1 cup dry)
1 1/2 tablespoons lime juice
1 teaspoon vegetable oil
2 tablespoons fresh chopped cilantro
1/4 teaspoon salt

4 burrito-size tortillas
sour cream
guacamole

Put lemon, lime and orange juices in a plastic food storage bag with the oil, cumin, salt and pepper. Shake to combine. Add the chicken to the bag, seal and toss to coat. Marinate the chicken for 2 to 4 hours.

Heat the oil in a pan over medium heat, then add the sliced onion. Cook, stirring often, until the onions are brown and caramelized, about 30 minutes.

Combine the tomatoes, red onion, jalapeo (if using), and chopped cilantro. Season with salt and pepper to taste.

Drizzle the lime juice and oil over the top of warm rice, sprinkle with 2 tablespoons chopped cilantro and salt; fluff with a fork.

When ready to eat, grill the chicken breasts in a grill pan for 5 minutes over medium high heat. Flip and cook another 4 minutes. Allow to rest before slicing into strips.

Warm tortillas over a gas burner or in the microwave for about 15-30 seconds. Place on a flat surface, evenly distribute the rice and chicken, top with the pico de gallo, sour cream and guacamole. Fold the flap nearest you over the filling, then fold in the sides. Roll the burrito away from you, keeping it tight to form a log.

Black Bean, Avocado and Onion Quesadillas

I like to have one Mexican dish on the menu every week. Lately I've felt like we're eating too much meat so I was on the hunt for a vegetarian dish. My friend Jaida recommended these Black Bean and Avocado Quesadillas and I couldn't wait to try them.

black bean quesadillas

One nice thing about cooking without meat is the prep time is substantially less. I was able to toast the tortillas while I mashed the beans and avocado and then it was simply a matter of assembling and baking to melt the cheese. I love easy dinners like that.

black bean quesadillas2

We all loved these. SP said he thought the beans were unnecessary but I liked the contrasting flavors. Plus the protein - beans are so good for you. I opted to add caramelized onions for flavor and to break up the monotony of mashed beans and avocado and it was the perfect addition. Delicious!

Black Bean & Avocado Quesadilla
Adapted from Sweet Beginnings, originally from Sing For Your Supper

1 onion, thinly sliced
1/2 tablespoon butter
1/2 tablespoon olive oil
salt
cooking spray
4 burrito-size flour tortillas
1 can black beans, drained, rinsed and mashed
1 avocado, mashed
shredded cheese (mix of cheddar, monterey jack, etc)
lime wedges
sour cream for dipping

Heat a skillet over medium heat. Melt the butter and olive oil together. Add the onion slices, season with salt and allow to cook slowly until they caramelize. This will take about 30 minutes. Stir frequently to avoid burning. The onions can be made ahead of time, allowed to cool and then refrigerated until ready to use.

Preheat the oven to 350 degrees.

Heat a large skillet or griddle over medium-high heat. Spray with cooking spray. Place 1 tortilla at a time in the skillet, turning often to brown on both sides. Remove to a plate.

Place two of the tortillas side by side on a baking sheet lined with foil. Top each with half the mashed beans followed by half the mashed avocado. Add half the onions to each tortilla, then top with cheese. Place the other two tortillas on top.

Bake in the oven for 5-10 minutes until the cheese is melted, then cut into triangles. Serve with lime wedges and sour cream for dipping.

Chile Tortilla Eggbake

Sometimes I really like breakfast for dinner. I also like make-ahead meals that allow me to just pop a dish into the oven. I'm a big fan of stratas and this Chile Tortilla Eggbake sounded great.

chile tortilla egg bake

I had to modify the recipe slightly because my taco-size tortillas didn't cover the bottom of a 9x13 dish. I used a smaller dish and it was filled to the brim, which meant it took longer to cook, so I'd recommend sticking with the 9x13 and just using more tortillas. We all enjoyed this but I felt like it needed something. I think adding some breakfast sausage or cooked bacon to the egg mixture would be good.

Chile Tortilla Eggbake
As seen on Jennas Cooking Journey, originally from Spoonful

8-10 flour tortillas, soft-taco size
3-4 small cans of chopped green chiles, drained and rinsed in a sieve
1 pound grated Monterey Jack cheese
5 eggs, beaten
2 cups milk
1 teaspoon kosher salt (or half as much table salt)

Toppings:
Pico de gallo
Sour cream
Guacamole

Grease a 9x13-inch baking dish.

Cover the bottom of the dish with tortillas, overlapping as little as possible. You can tear them in half, if needed. Top with 1/2 of the chiles and 1/3 of the cheese, then add another layer of tortillas and top it with the rest of the chiles and another 1/3 of the cheese. Add the final layer of tortillas, top with the remaining cheese. Whisk together the eggs, milk, and salt in a bowl, then pour over the casserole.

Cover with plastic wrap and refrigerate overnight.

When ready to cook, preheat the oven to 350 and take the casserole out of the fridge. Let it come to room temperature (about 2 hours). Remove the plastic wrap and bake for 35 to 45 minutes. It's done when it's browned around the edges and doesn't jiggle. Let it sit for 10 minutes before cutting it so that it has time to set up. A little bit of clear liquid that separates as you slice it is normal.

Serve topped with pico de gallo, sour cream, guacamole or any other toppings you prefer.

Green Chile Chicken Tacos

People usually think of tacos as an easy weeknight meal. Not me. The filling might be easy but as I'm chopping up all the various toppings, filling bowl after bowl to put in the center of the dining room table, I find myself thinking "this is most certainly not an easy weeknight meal." Am I alone in this?

greenchilechickentacos2

These Green Chile Chicken Tacos are worth it, though. The filling is certainly easy to put together - you're just chopping chicken, mixing with seasonings and cooking in a skillet before adding the green chiles. Simple. The toppings might take a bit more time to get together but they're all worth it. Even the lime wedges. I squeezed a bit of fresh lime juice over each of my tacos and it really brightens them up.

greenchilechickentacos

We all loved these. I increased the chicken to 1 1/2 pounds and it made enough for five tacos at dinner (although SP did overfill both of his tacos) and there was only enough leftover for two more tacos the next day. Baby Girl was, as she likes to say, a member of the clean plate club.

greenchiletacos3

I can't wait to make this again, I'll just allow myself some more time for those pesky toppings.

Green Chile Chicken Tacos
As seen on So Tasty, So Yummy

2 tablespoons vegetable oil
1 1/2 teaspoons cumin
1 1/2 teaspoons garlic powder
1 1/2 teaspoons oregano
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 pounds boneless skinless chicken breasts, cut into cubes
4 ounce can chopped green chilies

taco shells/tortillas
shredded Monterey Jack cheese
shredded lettuce
diced tomatoes
guacamole
lime wedges

Whisk together the oil, cumin, garlic powder, oregano, salt and pepper in a medium bowl. Toss the chicken in the mixture to coat. Can be done in advance and refrigerated until ready to cook.

Heat a large non-stick pan over medium-high heat. Add the chicken, saut for 3 to 5 minutes. Add the chilies and saut for 3 to 5 minutes more. Reduce heat to low and simmer until ready to serve.

Warm the taco shells and fill each with cheese, then top with hot chicken, lettuce, tomatoes, guacamole and a squeeze of lime juice.

(Copycat) Chipotles Chicken Burritos

Amy recently posted these (Copycat) Chipotles Steak Burritos and I was immediately smitten. While I've only been to Chipotle once, I love a good burrito.

burritos2

I decided to make these with chicken rather than steak because we always have chicken in the freezer and steak can be expensive. These were fantastic. Absolutely delicious. We all inhaled our burritos. It took a bit of time to make the rice and chop up the pico de gallo (plus I made guacamole) but once everything was made these were really easy to assemble.

burritos

SP said I can make these any time I want. He's had Chipotle a few times for work lunches and said he appreciated that these were less greasy and tasted fresher and tastier. A winner all around. Thank you SO much, Amy!

(Copycat) Chipotles Chicken Burritos
As seen on Very Culinary
Makes 4-6 burritos, depending how full you stuff them

1 teaspoon dried oregano
1/2 teaspoon cumin powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
scant 1/8 teaspoon cayenne pepper
pinch of salt and pepper
2 teaspoons vegetable oil
1 pound chicken breasts, cut in half lengthwise

4 roma tomatoes, cored and diced small
1 cup finely diced red onion
1 jalapeo chile, seeded and minced
2 tablespoons fresh chopped cilantro

2 cups cooked basmati rice, warm
1 1/2 tablespoons lime juice
1 teaspoon vegetable oil
2 tablespoons fresh chopped cilantro
1/4-1/2 teaspoon salt

1 can (15 ounce) low sodium black beans, rinsed, drained, and warmed
1/2 cup sour cream
4 (10-inch) flour tortillas

Combine oregano, cumin, garlic powder, onion powder, cayenne, salt and pepper and vegetable oil. Rub spice mixture over both sides of the chicken. Refrigerate while preparing your other ingredients.

Combine the tomatoes, red onion, jalapeo, and chopped cilantro.

Drizzle the lime juice and oil over the top of warm rice, sprinkle with 2 tablespoons chopped cilantro and salt; fluff with a fork.

Heat a grill to medium-high. Cook chicken for 5 minutes, flip and cook another 4 minutes. Slice thinly.

Warm tortillas over a gas burner or in the microwave for about 15-30 seconds. Place on a flat surface, evenly distribute the rice and chicken, top with beans, the pico de gallo and sour cream. Fold the flap nearest you over the filling, then fold in the sides. Roll burrito away from you, keeping it tight to form a log. Rest, seam side down.

Serve with tortilla chips and guacamole.

Flautas with Shredded Chicken

Another recipe prepared by SP, this one for Flautas with Shredded Chicken from the Williams-Sonoma Mexican cookbook.

flautas

We had a Mexican feast the night SP made these - I prepared yellow rice and refried beans while he did the flautas. And man, were these good! Crispy and crunchy, with great flavor. I loved the salsa verde and sour cream on top. We tried them with both corn and flour tortillas. The corn were crispier and the flour chewier, but I think we preferred the flour over the corn. Both were good, so just use whichever you prefer.

flautas2

This was a bit time-consuming, mainly preparing the filling and rolling the flautas, but SP used a rotisserie chicken, which cut down on some of the prep. The recipe made way more than we could eat so I froze half for another time.

Flautas with Shredded Chicken
As seen in Williams-Sonoma Mexican Cookbook

1 tablespoon canola oil, plus more for frying
1/2 white onion, finely chopped (about 3/4 cup)
3 serrano peppers or jalapeno chiles, finely chopped (remove ribs and seeds)
2 garlic cloves, minced
1 large ripe tomato, finely chopped or 1/2 cup drained canned diced tomato
2 1/2 cups finely shredded poached chicken
sea salt
20 corn or flour tortillas, about 6 inches in diameter
4 cups finely shredded romaine lettuce
1 teaspoon fresh lime juice
To serve - salsa verde, crema or sour cream, guacamole

In a frying pan over medium-high heat, warm 1 tablespoon oil. Add the onion, chiles, and garlic and saute until softened, about 2 minutes. Stir in the tomato and continue to cook, stirring constantly, until the mixture thickens and the color changes, about 3 minutes. Fold in the chicken, season to taste with sea salt, and heat thoroughly. Remove from the heat and set aside.

Place a heavy frying pan over medium-high heat until hot. Lay a tortilla in the pan for a few seconds until hot. Transfer to a plate and lay some of the chicken filling across the lower third of the tortilla. Tightly roll the tortilla up into a tube and secure with a toothpick, then set aside. Repeat with the remaining tortillas.

In a bowl, toss the lettuce with the lime juice. Spread it out on a serving plate or on individual plates, dividing it evenly.

Pour oil to a depth of at least 3/4 inch into a deep heavy frying pan and heat over medium-high heat until the oil shimmers and registers 350 on a deep-frying thermometer. Add the flautas, a few at a time, and fry until crisp and pale gold on all sides. Using tongs, transfer them to paper towels to drain. Keep warm in a low oven while frying the rest.

Place the flautas on the lettuce. Spoon 1/2 cup salsa across the flautas and top with the crema. Serve with more salsa, crema, and guacamole, if desired.

**To freeze, prepare the flautas but do not fry them. Cover a baking sheet with plastic wrap and arrange the flautas on the sheet, evenly spaced so they aren't touching. Cover with more plastic wrap and place the baking sheet in the refrigerator until the flautas are completely cold. Wrap each flauta in plastic wrap or aluminum foil, and freeze. To cook, thaw the flautas completely then unwrap and fry as directed above.

Recipe Redo - Taco Rice

I first made this Taco Rice in January 2012 and felt it needed a bit of work. The original recipe didn't have any sauce and that's a big no-no in this house. I was craving tacos but wanted something slightly different. Time for a recipe redo!

tacorice2

The result: delicious. This was perfect. I had barely finished eating and was already thinking about when I could make it again. The tweaks I made - adding tomato paste, salsa and sour cream to the beef mixture - were just what we wanted. I also decided to add some frozen corn, mainly because I'm on a corn kick lately and thought the little kernels would be nice in the dish. I also added crushed tortilla chips for a bit of crunch and texture and they provided the perfect, salty accompaniment.

tacorice

Something to note - there's no oil in this dish. I've been saying it a lot lately but my friend Melissa has worked hard to cut oil out of most of her recipes. Ground beef is perfect for this method since the beef has plenty of fat already in it. If you add the onion and garlic to the pan at the same time as the beef they all cook together beautifully (and then there's no need to drain off the fat later). I've loved cutting unnecessary calories from our diet.

UPDATE April 2014 - new picture I posted on Instagram:

Taco Rice

Taco Rice
Modified from Cassie Craves

1 onion, chopped
1 clove minced garlic
1 pound ground beef
2 teaspoons cumin
2 teaspoons chili powder
Salt and pepper
2 tablespoons tomato paste
1/2 cup salsa
1/4 cup sour cream,
4 cups steamed rice
Toppings: shredded lettuce, chopped tomatoes, crushed tortilla chips and shredded cheddar

Heat a saute pan over medium heat. Add the onion, garlic and ground beef and saute until the onions are soft and the beef is cooked through, breaking the beef into small chunks as it cooks. Add the cumin, chili powder, salt and pepper and tomato paste. Let this simmer for about 5 minutes. Combine salsa and sour cream and stir into the ground beef.

Spread 1/2 to 1 cup of the steamed rice on each plate. Top with the seasoned beef. Top with shredded lettuce, tomatoes, crushed chips and cheese.

Recipe Swap: Sopapilla Cheesecake Bars

The theme for this recipe swap was Mexican food and I lucked out with the only dessert recipe submitted, these incredibly addicting Sopapilla Cheesecake Bars. We were heading to my parent's house for Memorial Day and since we didn't have anything planned for dessert I figured I'd whip these up and bring them over for everyone to share.

sopapilla2

Holy cow. These are incredibly simple but so fantastic. Anything with cream cheese in it is an automatic plus in my book but add in flaky crescent roll dough and cinnamon sugar and you've got a real winner. Like Nichole, this was my first experience with sopapilla and I'm sad that I've missed out all these years.

sopapilla

I have to give thanks for my friend Cassie for alerting me to an awesome new product, the Pillsbury Crescent Recipe Creations Seamless Dough Sheet. After failing to pinch together the perforated dough for these chicken suiza pockets, Cassie told me Pillsbury got wise to cooks using their crescent rolls for other dishes and came out with seamless dough. Brilliant. And no, I'm not being paid to endorse this product, I'm just really thankful I didn't have to fight with the dough when making these bars.

I admit to being a little sad about sharing these but that was a good decision for our waistlines. I heated my leftover pieces in the microwave for 30 seconds (my microwave is old and busted so things take longer to cook), and I definitely prefer it warm. SP and Baby Girl liked them cold. Whichever way you prefer, go out and buy the ingredients for these so you can make them ASAP. You'll thank me.

Sopapilla Cheesecake Bars
As seen on The Cookaholic Wife, from Pillsbury

Cooking spray
2 packages Pillsbury Crescent Recipe Creations Seamless Dough Sheet
2 bricks cream cheese, at room temperature
1 1/4 cups sugar, divided
1 teaspoon vanilla
1 stick butter, melted
1/2 tablespoon ground cinnamon

Preheat the oven to 350. Spray a 9x13 baking dish with cooking spray. Press one sheet of the crescent dough into the prepared baking dish.

Combine the cream cheese, 1 cup of the sugar and vanilla in the bowl of a stand mixer and beat on medium speed until light and fluffy. Alternatively, you can beat the ingredients using a hand mixer.

Spread the cream cheese mixture evenly over the crescent dough and then top with the other sheet of crescent dough. Pour the melted butter over the top of the dough.

Stir together the remaining 1/4 cup of sugar and the cinnamon. Sprinkle over the melted butter.

Bake for 30 minutes then let cool to room temperature. Refrigerate for at least 1 hour and cut into bars. Serve cold or warmed in the microwave for 5-10 seconds.
