Chicken Piccata Risotto with Crispy Capers

It's times like these that I wish I was a better food photographer. I don't feel like my photos adequately express how amazing this was, and that makes me sad. Because I want every person who reads this post to make this dish. That's how much we enjoyed it.

Baby Girl is a big risotto fan and I'm always on the lookout for new recipes. I saw this Lighter Chicken Piccata Risotto with Crispy Capers on Iowa Girl Eats and as soon as I saw her post I knew we'd love it. I'm a sucker for all things salty and the tang from the capers and lemon was just perfect.

The original recipe calls for adding all the chicken broth at once, but I'm a purist when it comes to risotto. I also omitted the garlic and added some white wine because that's how I always make risotto. SP had a work dinner the night I made this so he didn't get to taste it until lunch the next day. He actually sent me an email to say lunch was excellent. I can't wait to make this one again.

Chicken Piccata Risotto with Crispy Capers
Very slightly modified from Iowa Girl Eats

6-7 cups chicken broth
2 tablespoons extra virgin olive oil, divided
2 tablespoons butter, divided
1 large shallot, chopped
1 teaspoon fresh thyme, minced
salt and pepper
1 1/2 cups arborio rice
1/4 cup dry white wine
2 cups baby spinach, roughly chopped
1 lemon, cut in half
1/4 cup freshly grated parmesan cheese
1/4 cup capers, drained and patted dry
2 chicken breasts, cut in half lengthwise

Bring chicken broth to a boil in a saucepan then turn down the heat and keep at a simmer.

In a deep, heavy skillet, melt 1 tablespoon butter and 1 tablespoon oil over medium-high heat. Add the shallot, season with salt and pepper, and saute for about 2 minutes or until the shallot is tender. Add the thyme and cook for one minute, then add the rice. Cook for another 2-3 minutes to toast the rice, stirring frequently.

Add the white wine and bring to a boil. Once the rice has absorbed the wine, add 1 ladle (approx. 1 cup) of the simmering stock, and keep stirring nearly constantly, making sure to push down any rice stuck to the edges of the pans. Once the liquid is nearly absorbed, add another ladleful of stock. Continue to do this until the rice is cooked but still slightly chewy, about 25 minutes. Taste the rice frequently to check the consistency. If you notice you're running low on broth, add more to the saucepan so you don't run out.

When nearly all the broth has been absorbed but the rice is still creamy, add the spinach. Once the spinach is wilted, taste the rice to make sure it's done. Remove the pan from the heat then stir in the juice from 1/2 lemon, Parmesan cheese, and remaining 1 tablespoon butter. Taste, add salt and pepper if necessary and set aside.

While the risotto is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the capers and saut� until slightly opened, brown, and crispy, 2-3 minutes. Transfer with a slotted spoon to a paper towel-lined plate to drain.

Season the chicken breasts on both sides with salt and pepper then saute in the caper-infused olive oil, 4 minutes per side. When the chicken has 1 minute left to saute, squeeze the second lemon half over the chicken.

To serve, plate the risotto then top with a piece of chicken. Sprinkle some of the crispy capers on top.

Roasted Mushroom Risotto {Review}

I recently received a variety of rice from RiceSelect to sample. One of the samples was an arborio blend with mushrooms. We love risotto around here, so as soon as I saw this recipe for Roasted Mushroom Risotto I knew the arborio blend with mushrooms would be perfect.

This was an outstanding risotto. The roasted mushrooms had great flavor but I think my favorite part was the dried chanterelles. I was a little hesitant to buy them since half an ounce was $4.99, but it was well worth it. They added a great depth of flavor that really brought the whole dish together.

We love RiceSelect products (I'm a big fan of their pearl couscous, even though I haven't been able to find it for ages) so I knew their arborio would be a hit. And it was. Baby Girl, who up until this point has been hit or miss with mushrooms, positively loved this. She told me she was a big fan and cleaned her plate.

Roasted Mushroom Risotto

1/2 ounce dried chanterelle mushrooms
24 ounces white mushrooms cut in halves or quarters
4 tablespoons extra virgin olive oil, divided
1 tablespoon fresh thyme leaves, roughly chopped
Salt and pepper to taste
6 cups vegetable broth/stock
4 tablespoons unsalted butter, divided
1 clove garlic, minced
1/2 yellow onion, finely diced
1 1/4 cups Arborio rice
1/2 cup dry white wine (e.g. Chardonnay)
1/2 cup freshly grated Parmesan cheese more for garnish, if desired

Preheat oven to 425�F.

Place the dried chanterelle mushrooms and pour boiling water over them. Let them soak for twenty minutes. Drain and rinse, then set aside.

Place the white mushrooms on a large rimmed sheet tray and toss with 3 tablespoons olive oil, thyme and a sprinkle of salt and pepper. Spread into a single layer and place in preheated oven. Roast for 15 minutes, stir, and roast for another 10-15 minute or until golden brown.

Meanwhile, bring stock to a simmer in a saucepan.

In a deep, heavy skillet, melt 2 tablespoons butter and 1 tablespoon oil over medium-high heat. Add the rehydrated chanterelles, garlic and onion and saute for about 5 minutes or until onions are translucent. Add the rice and cook for another 2-3 minutes to toast the rice, stirring frequently.

Add the white wine and bring to a boil. Add 1 cup of the simmering stock, and keep stirring nearly constantly, making sure to push down any rice stuck to the edges of the pans. Once the liquid is nearly absorbed, add another 1 cup of stock. Continue to do this until the rice is cooked but still slightly chewy, about 25 minutes. Taste the rice frequently to check the consistency.

Remove from heat and stir in 2 tablespoons butter, Parmesan cheese and roasted mushrooms. Taste and add more salt and pepper, as needed. Serve immediately.

Breakfast Risotto

I've been on a major risotto kick lately so, naturally, as soon as Elly posted this drool-inducing Breakfast Risotto on our cooking board I immediately added it to the meal plan.

I'm a sucker for runny eggs so topping risotto with a runny egg is right up my alley. Initially I was going to use bacon in this recipe but I needed pancetta for the salad I was going to serve with it so I figured I'd give the pancetta a shot. In the future I'll probably stick with bacon since half a pound of pancetta was more expensive than a pound of bacon, plus I missed the smokiness.

Either way, this is a great recipe. We all loved it - Baby Girl was popping the crispy pancetta into her mouth like candy.

Breakfast Risotto
As Seen on Elly Says Opa!

4-6 cups chicken broth
2 tablespoons butter, divided
3 oz. pancetta, chopped
1 shallot, diced
1 clove garlic, minced
1 1/4 cups arborio rice
1/3 cup dry white wine
1/2 cup grated Pecorino Romano or Parmesan cheese
Fresh chopped parsley, minced (optional)
Poached eggs for serving

Pour the broth into a saucepan and bring it to a boil over medium-high heat. Reduce the heat so the broth is at a simmer.

In a heavy-bottomed skillet, melt 1 tablespoon of the butter. Add the pancetta and cook until it has crisped and rendered its fat. Remove with a slotted spoon and set aside.

Melt the remaining butter into the pan, and then add the shallot. Cook until tender, then stir in the garlic just until fragrant, about 30 seconds. Stir in the rice, coating with the butter and toasting the kernels until they are translucent, about 2 minutes.

Add the wine to the pan. Scrape up any browned bits and allow nearly all of the wine to be absorbed by the risotto. Add a ladle-full of warm chicken broth to the rice. Stir frequently and do not add another ladle of broth until the first is almost completely absorbed. Continue to stir frequently, adding broth by the ladle, until the rice is creamy and has just a slight bite in the center when you try it. This will take about 25 minutes.

Off the heat, stir in the cheese and pancetta. Season to taste with salt and pepper and serve immediately with poached eggs on top.

Broccoli Cheddar Risotto

I'm on a serious risotto kick these days. When one of the ladies on my cooking board sang the praises of this Broccoli-Cheddar Oven Risotto I couldn't wait to try it.

While I'm sure the oven method is easier, I prefer to cook risotto on the stove top because I have more control. The cooking method is the only change I made to the recipe.

We all loved this, even if I ended up with more broccoli than rice. The flavor was great and the rice was nice and creamy. I also like that this was an all-in-one starch and veggie side dish.

Broccoli Cheddar Risotto
Adapted from Food Network Magazine

4-6 cups low-sodium chicken broth
2 tablespoon extra-virgin olive oil, divided
2 broccoli crowns, cut into small florets
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter, divided
1 small onion, finely chopped
1 1/4 cups arborio rice
1/4 cup dry white wine
1 cup grated sharp cheddar cheese (about 4 ounces)

Bring the chicken broth to a low simmer in a saucepan. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the broccoli and season with salt and pepper. Cook, stirring every so often, until the broccoli is tender and browning in spots, about 15 minutes. Remove the broccoli from the skillet.

Melt 1 tablespoon oil and 1 tablespoon butter in the now-empty skillet over medium-high heat. Add the onion and cook, stirring occasionally, until slightly softened, about 2 minutes. Add the rice and stir to coat. Pour in the wine and cook until evaporated, about 1 minute.

Start adding the chicken broth one ladle-full at a time, letting it fully absorb before adding more. This process takes anywhere from 17-25 minutes.

Before you add the final ladle of broth, add the broccoli back in. Add the final ladle of broth and once it's absorbed, taste some of the rice to make sure it's cooked through. Turn off the heat and add the grated cheese and 2 tablespoons of butter. Adjust seasoning, if necessary.

Risotto with Caramelized Onions and Spinach

We were all so enamored with Leek and Pea Risotto I made for the last recipe swap, so when I had a bag of baby spinach in the fridge that needed to be used up I immediately thought of risotto. Not surprisingly, Mary Ellen had a few spinach risotto recipes on her blog. Since I love caramelized onions I decided to make her Risotto with Caramelized Onions and Spinach.

SP couldn't believe that the only seasonings in the dish were the salt and pepper I used for the onions. There is just so much flavor from caramelizing them and the taste really shown through. He couldn't stop raving about it and is now a true risotto convert.

Risotto with Caramelized Onions and Spinach

2 tablespoons olive oil, divided
3 tablespoons butter, divided
1 large onion sliced into thin rings
Salt and pepper to taste
1 1/4 cups arborio rice
1/4 cup dry white wine
6 cups low sodium chicken broth, warmed
1 6-oz bag baby spinach, chopped
1/2 cup grated Parmesan cheese

Heat 1 tablespoon each of the oil and butter in a large pan over medium heat. Stir the onions often so they brown slowly. This can take 30-40 minutes. Adjust the heat as necessary to keep the onions from burning. I had to add a little water to the pan to keep the onions from burning and that helped pick up the browned bits from the bottom of the pan. Remove the onions from the pan and allow to cool before chopping into small pieces.

Add the other 1 tablespoon of oil to the pan. Add the rice and stir for 1-2 minutes. Add the white wine and stir until it is absorbed.

Recipe Swap: Leek and Pea Risotto

Time for another recipe swap! This month's theme was Blogger's Choice, which means we can pick any recipe from our assigned blog. I got my friend Mary Ellen's blog and let me tell you, I had a REALLY hard time picking a recipe to make. I've already made quite a few of her things and I just couldn't narrow down what I wanted to make. Did I want chicken, tofu, vegetarian, breakfast? I had no idea. Everything sounded good. Finally I decided to make a risotto since Mary Ellen has said numerous times that it's her favorite thing to make. I chose this Leek and Pea Risotto because I had some leeks I needed to use up and I always have frozen peas on hand.

The only change I made was to leave the leeks in the pan while I cooked the rice rather than removing them, which may have been a mistake. SP said he couldn't taste the leeks at all, so maybe they'd have been more pronounced if they hadn't cooked down so much. Even so, this was outstanding. I really love risotto and it's so easy to make. I don't know why it has such a bad reputation for being difficult.

I served the risotto with crispy pork chops - I pounded the pork very thin then breaded it with egg and panko bread crumbs, then shallow-fried them in some vegetable oil. They were the perfect accompaniment. This was an outstanding dinner. I can't wait to make more versions of risotto. Check out Mary Ellen's risotto tab for more recipe ideas.


Leek and Pea Risotto
As seen on Mary Ellen�s Cooking Creations

6 cups chicken broth
3 tablespoons extra-virgin olive oil
2 medium leeks (white and pale green parts only), thinly sliced and washed
1 1/4 cups Arborio rice
1/4 cup dry white wine
1/2 cup frozen peas
2 tablespoons unsalted butter (I didn't use this)
1/3 cup grated Parmigiano-Reggiano

Bring stock to a simmer in a medium saucepan, then keep at a low simmer.

Cook leeks in 2 tablespoons oil in a 4-quart heavy pot over medium heat, stirring occasionally, until softened but not browned, 7 to 8 minutes. Transfer to a plate.

Add remaining tablespoon oil and rice to pot and cook, stirring constantly, until rice is coated evenly, about 1 minute.

Add wine and simmer, stirring, until most has been absorbed, about 1 minute.

Add 1 cup hot stock to the pan. Stir constantly until stock has been absorbed. Continue simmering and adding hot stock, 1 cup at a time, stirring constantly and allowing each addition to be absorbed before adding the next, until 1 cup stock is left, 15 to 18 minutes.

Add peas, leeks, and remaining cup of stock and cook, stirring, until rice is just tender, 3 to 5 minutes.

Stir in butter and cheese then remove from heat.

Tomato and Mozzarella Risotto

SP and I have been alternating cooking Sunday dinner for my parents. He tends to lean towards Italian dishes but even so, I was pretty surprised when he told me he wanted to make Tomato and Mozzarella Risotto. He's made it clear to me in the past that he isn't a fan of one of my all-time favorite dishes. Apparently I was just putting too many "weird" ingredients in my risottos of the past. Who knew?

This was truly outstanding. SP did a great job cooking the rice to perfection. He used some of the tomatoes my mom and I canned over the summer instead of the cherry tomatoes in the original recipe, as well as some of the fresh basil I froze when my basil plant was thriving. It was great to throw in those cubes of basil leaves and smell that summery aroma.

He made one and a half recipes (rather than doubling the recipe) for 4 adults and 1 child and there was barely enough leftover for lunches the next day. And that was with salad and bread on the side. It's just so good we all kept going back for more.

Tomato and Mozzarella Risotto
Recipe from Lidia Bastianich

4 1/2 cups hot chicken broth
5 tablespoons extra-virgin olive oil
2 garlic cloves, sliced
2 cups cherry tomatoes, halved
1/2 cup fresh basil leaves
1 medium onion, minced, (about 3/4 cup)
1 medium leek, white parts only, trimmed, cleaned, and chopped
6 scallions , trimmed, white and green parts chopped separately
2 cups arborio rice
1/3 cup dry white wine
salt and freshly ground black pepper
1 1/2 cups fresh mozzarella
1/3 cup Parmigiano-Reggiano, freshly grated
2 tablespoons unsalted butter, cut into 4 pieces

Pour the stock into a 2 quart saucepan and keep it hot over low heat.

Heat 2 tablespoons extra virgin olive oil in a wide skillet over medium heat. Add 2 cloves garlic, sliced, and shake the pan until the garlic is lightly browned. Slide in 2 cups halved cherry tomatoes and stir gently until they are juicy. Toss in a handful of shredded fresh basil, remove the pan from the heat, and set aside.

Heat the remaining olive oil in a wide 3 to 4-quart Dutch oven over medium heat. Stir in the onion and cook, stirring occasionally, until softened, about 4 minutes. Stir in the leek and white parts of the scallions and cook, stirring, until the onion is golden, about 6 minutes. Adjust the heat under the pan as the onion browns so that it cooks slowly with gentle bubbling.

Stir in the rice and continue stirring until the grains are coated with oil and toasted, the edges become translucent, about 1 to 2 minutes. Pour in the wine and let it boil, stirring the rice, until evaporated.

Season the rice with salt and ladle enough of the hot stock into the pan to barely cover the rice. Bring to a boil, then lower the heat so the stock is at a lively simmer. Cook, stirring constantly, until all the stock has been absorbed and you can see the bottom of the pan when you stir. Continue cooking, pouring in the remaining hot stock in small batches - each additional should be just enough to completely moisten the rice - and cook until each batch of stock had been absorbed. Stir constantly until the rice mixture is creamy but al dente, this will take 16 to 20 minutes from the time the wine was added. Stir in the sauteed cherry tomatoes halfway through cooking.

Remove the pan from the heat. Stir in half the grated cheese, taste the risotto, and add salt, if necessary, and pepper. Stir in 1 1/2 cups of cubed fresh mozzarella (preferably mozzarella di bufala) along with the grated cheese and butter. Stir in butter and green parts of the scallion until the butter is completely melted.

Ladle risotto into warm, shallow bowls and serve immediately after finishing.
